If you like, alternate vegetable pieces with the chicken chunks on these Middle Eastern style kabobs (this will make the dish lower in fat). Bell pepper, squash, cherry tomatoes, and onions are good candidates. Serve the skewers with a rice or cosuscous pilaf. This is also great on the grill.

1/2 cup yogurt
1/2 cup fresh parsley - chopped
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 clove garlic - minced
1 tablespoon paprika
1 tablespoon curry powder
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 pounds chicken breast - cut in 1" pieces

For The Marinade

In a bowl, combine yogurt, parsley, lemon juice, olive oil, garlic, paprika, curry powder, cumin, salt and pepper.


Add the chicken. Cover with plastic wrap and refrigerate for at least 20 minutes.

To Grill

Prepare outdoor barbecue. Place chicken chunks on skewers. Cook 10 minutes on each side (or until tender & no longer pink in the middle), basting occasionally with yogurt mixture.

To Broil in Oven

Preheat broiler. Place chicken chunks in broiling pan. Baste with yogurt mixture. Place broiling pan 8 inches away from heat source. Broil 12 minutes or until browned; turn, and baste. Broil 8 minutes longer or until chicken is done.
