Chocolate Almond Sandwiches

These cookies are a must for chocoholics. The intense chocolate flavors and their macaroon-like texture makes even just one, a satisfying treat. These cookies are one of my husband's favorites. I based this recipe on Martha Stewart's Chocolate Kisses recipe.

2 egg whites
1 cup sugar
6 tablespoons cocoa
1 1/2 cups blanched almonds - finely ground
1/2 teaspoon shortening
4 ounces semisweet chocolate - melted

Heat oven to 325 degrees F. Line a baking sheet with parchment paper (foil will do, as well) Beat egg whites in a medium bowl on high speed, until egg whites are stiff. Slowly, add the sugar and continue beating until the egg whites are very thick (2 minutes) Add cocoa and mix. Stir in almonds and mix until incorporated. Drop dough by the teaspoonful onto the prepared baking sheet, about 2 inches apart. Bake for 15 to 17 minutes. Let cool on sheet for several minutes, then transfer cookies to a rack to cool completely. Combine shortening and chocolate in a microwave proof bowl. Microwave until chocolate is melted (60 seconds on high power), stirring halfway. Spread about a 1/2 teaspoonful of chocolate mixture on a cookie. Press another cookie on top, until they stick together. Repeat, with all the remaining cookies.
