When the Soup Nazi's Mulligatawny turned out to be such a success, I had to try more of the "Soup Nazi's" recipes. This one (also courtesy of Top Secret Recipes) was not quite as smashing. It basically turns out to be a flavorful broth with chunky sweet potato and cashew pieces. However, it is a nice change from most of your run of the mill sweet potato soup recipes (potatoes pureed in broth).

4 sweet potatoes
8 cups water
1/3 cup butter
1/2 cup tomato sauce
2 tablespoons half and half
2 teaspoons salt
1/8 teaspoon pepper
1 dash thyme
1 cup cashews

Preheat oven to 375 degrees. Bake the sweet potatoes for 45 minutes or until they are soft. Cool the potatoes until they can be handled.
Peel away the skin, then put the potatoes into a large bowl. Coarsely mash the potatoes for 15-20 seconds. Spoon the mashed sweet potato into a large saucepan over medium-high heat, add the remaining ingredients and stir to combine. When the soup begins to boil, reduce the heat and simmer for 1 hour. -
