This filling vegetarian meal couldn't be any simpler to make.

1 tablespoon vegetable oil
2 cups onion - thinly sliced
1 cup brown rice
1 tablespoon curry powder
2 teaspoons mustard seed
1 teaspoon salt
1/2 teaspoon black pepper
4 cups water
1 cup lentils
1 cup cilantro - chopped
1/2 cup sour cream, light

In a large Dutch oven, heat olive oil over medium high heat. Add onion and saute until browned (10 minutes). Add rice, curry powder, mustard seeds, salt and pepper. Saute 1 minute. Add water and lentils, bring to a boil. Cover, reduce heat and simmer for 1 hour. Remove from heat. Stir in cilantro and sour cream.
