There are so many variations of apple pie out there, but this simple one is one of my favorites. A plain, buttery crust with a hint of lemon zest, a slightly thickened apple filling, and a nutty, crunchy streusel topping. For a more elegant presentation, you might want to make little tartlets (as I have above).

1 1/3 cups all-purpose flour
2 tablespoons sugar
2 teaspoons grated lemon zest
1/8 teaspoon salt
1/2 cup cold butter - cut in 1/2" pieces
2 tablespoons cold water
5 cups apple slices
1/2 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
1 cup rolled oats
1/2 cup brown sugar - packed
1/3 cup flour
1/3 cup butter
1/2 cup pecans - chopped

For Crust

Blend flour, sugar, grated lemon peel and salt in processor. Add butter; cut in using on/off turns until mixture resembles coarse meal. Mix in enough water to form dough. Turn dough onto work surface. Gather dough into ball and flatten into disk. Wrap in plastic; refrigerate 1 hour.

For Apple Filling

In a large bowl, combine apples, sugar flour, and cinnamon. Toss to coat and spoon into greased baking dish.

For Streusel Topping

In a small bowl, combine rolled oats, brown sugar, and flour. Using a pastry blender, cut in butter until crumbly. Stir in pecans.

Assembly

Preheat oven to 375 degrees F. Roll out pie dough on lightly floured surface to 13 inch round. Transfer dough to a 9 inch diameter tart pan with removable bottom. Trim dough overhang to 1/2 inch. Fold overhang under to form double thick sides. Freeze crust 15 minutes. Fill pie shell with apple filling, top with streusel. Bake until topping is golden brown and apples are tender (40 minutes).
