Croque monsieur is basically a fancy name for grilled ham and cheese. It is sometimes spread with mustard instead of butter. Some serve it with the classic white sauce, bechamel. Variations include chicken and Gouda instead of ham and Gruyere. A croque madame is a croque monsieur with an egg on top.

4 tablespoons butter - at room temperature
8 thin white sandwich bread slices - crusts removed
8 thin Gruyere or Swiss cheese slices
4 ham slices

Lightly butter 1 side of each bread slice. Place 1 cheese slice on buttered side of each of 4 bread slices. Top with ham slice and another cheese slice. Close sandwiches with remaining bread slices, buttered side in.

Melt 2 tablespoons butter in heavy large skillet over medium-low heat. Add sandwiches in batches and cook until golden brown, adding more butter as necessary, about 2 minutes per side. Serve immediately.
