While this isn't an authentic Middle Eastern couscous dish, it makes for a quick, healthy weeknight dinner. If couscous isn't a pantry staple in your home, try it with rice.

4 small chicken breast halves
2 teaspoons vegetable oil
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1 teaspoon vegetable oil
1 cup green apples - peeled and chopped
1 clove garlic - finely chopped
2 teaspoons curry powder
2 teaspoons grated orange peel
1 cup chicken broth
1 tablespoon cornstarch
2 cups couscous, cooked

Remove excess fat from chicken; cut chicken into 1 inch pieces. Heat 2 teaspoons vegetable oil in 10 inch nonstick skillet until hot. Cook and stir chicken, salt, and red pepper in oil over medium heat until chicken is done, about 5 minutes. Remove chicken. Ad 1 teaspoon vegetable oil, apple, onion, garlic, curry powder, and orange peel. Cook and stir until apple is tender, about 7 minutes. Stir in chicken broth and chicken. Heat to boiling, stirring constantly. Mix cornstarch and water; stir into chicken mixture. Boil and stir until mixture slightly thickens, about 1 minute. Serve over couscous.
