The dough is almost shaped into a deep bowl of sorts, allowing you to pile up those toppings. Salami, mushroom, onion, bell pepper, and olives are merely suggestions; top the pizza with whatever you like!

For the Dough
1 tablespoon sugar
1 cup warm water
2 teaspoons active dry yeast
3 cups all-purpose flour
1/4 cup olive oil
For the Pizza
3 cups mozzarella cheese
1 cup tomato sauce
1/2 cup Parmesan cheese
1/3 cup salami slices
1/4 cup onion - thinly sliced
1/4 cup olives
1/2 cup mushroom - thinly sliced
1/2 cup bell pepper - thinly sliced

For the Dough

In a small bowl, dissolve the sugar in the warm water. Sprinkle the yeast over the water and stir until it dissolves. Let the yeast mixture stand for 5 minutes, until a layer of foam forms on the surface. In a large bowl, combine the flour and the salt. Make a well in the center of the flour mixture and pour the olive oil and the yeast mixture. Stir the flour into the wet ingredients, until all the flour is incorporated. If its too dry, add more water. On a lightly floured surface, knead the dough for 15 minutes, until it is smooth and elastic. Shape the dough into a ball and put in a well-oiled bowl. Cover with a moist towel and let rise in a warm place until double in bulk (about 1 1/2 hours). Punch the dough down and let it sit in your deep dish pan for 10 minutes. Flatten the dough with the heels of your hands and fingertips to evenly cover the bottom of the pan. Pull the dough up to the edges of the pan to form a "lip". Preheat oven to 475 degrees F. Let the dough rise for twenty minutes.

For the Pizza

Prick the dough with a fork and bake for 4 minutes. Brush dough with a thin layer of olive oil. Spread the mozzarella cheese over the bottom of the crust. Lightly spoon and spread the tomato sauce. Sprinkle with Parmesan cheese. Distribute evenly the salami, onions, olives. mushroom, and bell pepper. Bake until cooked through (30 min.)
