This pudding is a snap to make. Don't be turned off by the soy milk in this recipe. It gives the pudding a nice texture and it tastes very similar to milk. Besides, the nutritional benefits of soy are tremendous.
1/2 cup brown sugar - packed
1/4 cup cornstarch
3 tablespoons unsweetened cocoa powder
1 tablespoon instant coffee granules
1/8 teaspoon salt
2 cups soy milk
2 ounces bittersweet chocolate - chopped
1 teaspoon vanilla extract
In a medium heavy saucepan, whisk together sugar, cornstarch, cocoa, coffee, and salt until combined. Slowly whisk in soy milk over medium heat. Bring to a boil; reduce heat to a simmer, stirring constantly until thickened. Remove from heat, stir in chocolate until melted. Add vanilla extract. Pour mixture into serving bowl. Cover surface with plastic wrap and chill (at least 3 hours) until ready to serve.
