This is a simple Middle Eastern dish mostly made of rice and lentils. The large amount of olive oil results in a very moist dish. You can eat it hot or cold. I also like it with yogurt.

1 cup lentils
4 cups water
1 large onion - diced
1/2 cup olive oil
1/2 teaspoon pepper
1/2 teaspoon cumin
1/2 cup basmati rice
1 cup chicken stock

In a medium saucepan, boil lentils and water for 20 minutes (until water has evaporated). In a medium frying pan, heat olive oil over medium high heat. Add onions and cook until slightly browned (10 minutes). Add onions, pepper, cumin, salt, rice, and chicken stock to lentils. Cover and cook until rice is done (20 minutes). Serve warm or cold.
