This version of mushroom barley soup is so easy to prepare, tastes great, and only has 1 gram of fat.

1 teaspoon olive oil
2 medium onion - diced
2 stalks celery - diced
2 cloves garlic - minced
1 pound mushroom - sliced
1/2 cup soy sauce
1 cup barley
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon dill - minced
1 teaspoon fresh parsley - minced
10 cups water
2 carrots - sliced

In a large pot, heat olive oil. Add onion, celery, garlic, and mushrooms. Saute for about 4 minutes, and then add the barley, soy sauce, garlic powder, dill, parsley, and water.

Bring to a boil, and then simmer for 1 hour 15 minutes. Add carrots, let simmer for 45 more minutes.
