I think the key to good oatmeal is the oats you use. You need steel cut oats like McCann's Finest oatmeal (available in most American supermarkets), none of those flat rolled instant oats. Also, it make a big difference whether you make it with water or something more rich like half and half or cream. I think milk is a good compromise. Finally, certain add-ins like chopped nuts (macadamias and walnuts), fruits (bananas, blueberries, dried cherries), and sweeteners (honey, maple syrup, sprinkled brown sugar) definitely help!

4 cups milk
1 cup oatmeal
1 tablespoon butter
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/2 cup packed brown sugar

In a medium saucepan over medium high heat, bring milk to a low boil. Add oatmeal, stirring well. When the mixture begins to thicken reduce heat. Add butter, vanilla, cinnamon, and brown sugar. Simmer for 30 minutes, stirring occasionally.
