The spicy, sweet, fruity salsa is a perfect complement to the pork chops. This is also great on the grill, perfect for summer barbecues.

2 teaspoons chili powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground black pepper
8 pork loin chops
1 teaspoon olive oil
vegetable cooking spray
1/2 cup salsa
1/4 cup apricot preserves
4 cups nectarines - sliced
1/4 cup cilantro - chopped

Combine first 6 ingredients; rub mixture over both sides of pork. Heat oil in a large nonstick skillet coated with cooking spray over medium high heat. Add pork; saute 2 minutes on each side or until done. Remove from pan and keep warm.
Add salsa and preserves to skillet and bring to a boil. Cook 1 minute. Stir in the nectarine slices and cilantro. Cook mixture 1 minute. Serve salsa with pork. -
