Banana-Nut Ice Milk

This is one of the best tasting ice-milks I have come across. Use a really ripe banana to get an intense flavor. As an added treat (and slightly added calories) candy the walnuts before adding them to the ice cream mixture.

3/4 cup sugar
4 ounces egg substitute
1 cup banana - mashed
1/2 teaspoon vanilla extract
1 1/4 cups 2% low-fat milk
1 cup evaporated skim milk
3 tablespoons walnuts - toasted

Place the sugar and egg substitute in a food processor; process 1 minute. Add banana, vanilla. and salt; process until smooth. Pour the mixture into a large bowl; stir in milks.

Pour mixture into the freezer can of a 1 quart ice-cream freezer; freeze according to manufacturer instructions. spoon into freezer safe container; stir in walnuts. Cover and freeze at least 1 hour.
