Thai Chicken Noodles

This is a less traditional and less caloric recipe. However, its still quite tasty and so easy to make that its become a staple in our home. If you prefer, you can eat it cold (like a pasta salad).

3 1/2 tablespoons peanut butter
3 tablespoons brewed tea
3 tablespoons rice vinegar
2 tablespoons soy sauce
2 teaspoons chili oil
1 tablespoon ginger
1 teaspoon honey
1/2 teaspoon sesame oil
2 tablespoons sesame seeds - toasted
3 tablespoons green onions
8 ounces pasta
1 pound chicken breast - cut in 1/4" strips
4 carrots - shredded
1 cup sprouts
1/2 cup cilantro - chopped

Combine first 8 ingredients in a blender (peanut butter to sesame oil), process until smooth. Set aside. Cook pasta according to directions. In the meantime, season chicken strips with red pepper and salt. Saute in 2 tablespoons olive oil, until done (about 7 minutes). After pasta is done, drain and place back in pot. Add peanut butter sauce, chicken, shredded carrot, sprouts, green onion, cilantro and sesame seeds; toss well and heat through on low. Serve.
