This Middle Eastern appetizer works best with a really thick yogurt. If I can't find one off the shelf I usually strain the yogurt to drain some of the water. Tzatziki can be eaten as an appetizer with pita bread or as a condiment for meats (especially Kibbi) and rice. If you prefer you can use fresh dill or dried mint instead of fresh mint.

3 cups yogurt
1 teaspoon salt
1 cup cucumber - peeled and diced
2 cloves garlic - minced
1 tablespoon white vinegar - optional
3 tablespoons fresh mint - finely chopped

In a medium bowl combine all ingredients. If you are making the tzatziki in advance, salt the cucumber first so that most of its juices drain away as opposed to making the appetizer watery.
