This recipe was given to me by Cafe Creosote reader Jeni Chang. I thought vegan cookies would be quite bland, but after trying these I am hooked. The Sugar in the Raw gives them an incredible crunch and all the spices add a lot of flavor. Turbinado sugar and Ener-G can be found in most health food stores.
1 cup margarine
1 cup firmly packed brown sugar
1/2 cup Turbinado sugar in the raw
6 teaspoons Ener-G egg replacer powder
2 teaspoons baking soda
6 tablespoons soy milk
2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 1/2 cups flour
3 cups rolled oats
1 cup raisins
Cream the margarine and sugars together with a fork until smooth, then add the egg replacer, baking soda, soy milk, spices and flour and stir until smooth. Then gently mix in the oats and the raisins. Bake at 350 until golden on top (about 10-15 minutes).
