These sweet and savory pancakes are a nice change from the usual breakfast fare. The salty bacon is nicely offset by the tartness of the apples (I use Granny Smith apples).
2 cups Bisquick® baking mix
1 cup milk
2 large eggs
2 large apples - coarsely chopped
1 1/2 cups cheddar cheese - shredded
8 slices bacon - cooked and chopped
vegetable cooking spray
In a large bowl, place Bisquick baking mix. In a small bowl, whisk eggs and milk. Whisk milk mixture into Bisquick baking mix to make a pancake batter.
Gently fold in apples, cheese, and bacon into pancake batter.
Heat a large nonstick skillet coated with cooking spray over medium high heat. Drop about a 1/4 cup of batter onto skillet. Cook pancake until done (about 4 minutes per side). Set aside, keep warm. Repeat with remaining batter. Serve pancakes with maple syrup.
