Greek Salad has always been one of my favorites. Be sure to use quality Kalamata olives and real Feta cheese. Traditionally, the salad is supposed to have red onion. In the picture, I have used salad greens instead of Romaine (it doesn't really matter).

For the Dressing
1/4 cup red wine vinegar
1/4 cup olive oil
1/4 teaspoon dried oregano
salt and pepper
For the Salad
4 cups romaine lettuce - washed and chopped
1 large cucumber - peeled and cubed
3 tablespoons olive - sliced
1 large tomato - chopped
1/2 cup feta cheese - crumbled

For the Dressing

In a small bowl, whisk the vinegar, olive oil, oregano, and salt and pepper.

For the Salad

In a large serving bowl, combine lettuce, cucumber, olive slices, and tomato. Pour dressing over salad. Toss well. Top with crumbled Feta cheese.
