Rompope is a Mexican vanilla-rum liqueur. To substitute Rompope liqueur use 1 1/2 oz. dark rum and 1 oz. vanilla flavor.

2 1/2 cups flour
1 teaspoon baking powder
2 eggs
1 1/2 cups bananas - diced
1/3 cup walnuts - chopped
1/4 cup Rompope
6 tablespoons butter - melted
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Warm maple syrup as needed
Butter as needed

Beat egg, milk, melted butter until well blended. Mix in dry ingredients: flour, baking powder, sugar, salt and cinnamon to form a slightly thick batter. Add Rompope liqueur and mix. Fold in diced banana and walnuts. Lightly grease a preheated griddle or non-stick fry pan. Pour batter onto cooking surface and cook until golden brown on both sides and cooked through. Serve with butter and warm maple syrup.
