This salad is as healthy as it sounds. I try to make a little extra pesto/ lemon juice mixture because I feel it is a little under dressed.

1 1/4 cups bulgur
2 cups boiling water
3 tablespoons pesto sauce
2 cups cherry tomatoes
3/4 cup feta cheese - crumbled
1/3 cup green onion - thinly sliced
1/4 cup fresh parsley - minced
salt and pepper
15 ounces garbanzo beans, canned - drained

In a large bowl, combine the bulgur and boiling water. Cover and let stand 30 minutes. Drain and set aside. In a small bowl, whisk pesto and lemon juice. In a large bowl, combine bulgur, pesto mixture, tomatoes, feta cheese, green onions, parsley, salt and pepper (to taste) and chickpeas. Toss gently to combine.
