Mojitos are a Cuban drink perfect for summer. Crushing the mint is a bit labor intensive, but its worth it for that really fresh taste.

1 bunch spearmint
3/4 cup sugar
1 lime - quartered
1/3 cup fresh lime juice
1 cup club soda - plus more
2 cups rum
ice cubes
mint sprigs

In a bowl, using a wooden spoon, crush the spearmint with the sugar and lime quarters until the sugar starts to dissolve and taste like mint. Add 1 cup of the club soda and stir until the sugar dissolves completely.

Strain the mixture through a coarse sieve into a pitcher and stir in lime juice and rum. Fill 8 tall glasses with ice and add mint sprig to each, lightly crushing the mint sprig with your hands. Pour the rum mixture over the ice. Top with club soda and serve.
