Cheesy Spinach Mashed Potatoes

I can't think of a tastier way to sneak spinach into your diet.

vegetable cooking spray
24 ounces fresh spinach
4 pounds potatoes - peeled and chopped
1/2 cup butter
1 1/4 cups milk - warmed
3 cups Swiss cheese
salt and pepper - to taste

In a large skillet coated with cooking spray, cook spinach (in batches if necessary) over medium high heat until it wilts, but retains a fresh green color. Set aside.

Cook potatoes in a large pot of boiling water until tender, about 25 minutes. Drain well. Return to pot and mash well. Add butter and milk gradually. Stir until smooth. Add Swiss cheese and spinach, stirring until cheese melts. Season with salt and pepper.
