Diabetic Hot Chili Sauce

This recipe is from viewer Graham Lubin. This sauce has a white rather than red head heat. Chili heads will know what I mean. I noticed that many proprietary chili sauces contain sugar, mollasses etc. this one is low fats and carbs.

6 Scotch Bonnet Chilis - Chopped
6 Habanera Chilis - Chopped
6 Birds Eye Chilis - Chopped
6 sun-dried tomatoes - Chopped
1 lime - juiced
1 Pint Bass Pale Ale
1 red onion - finely chopped
1/2 head garlic - finely chopped
1 Teaspoon sea salt
1/2 tablespoon olive oil

In a small saucepan, cook the onions and garlic until they have just sarted to softed but not colour. Add all the other ingredients and simmer for one hopur or until the sauce has reduced to half its volume. Cool, bottle and store for five days to allow flavours to mature and mingle, then enjoy.
