Brie Baked in Phyllo

This elegant appetizer is so simple to make and has many just as simple variations. You can top it with a variety of chutney or preserves. You could also halve the Brie wheel (before wrapping it) and stuff it with mushrooms, a contrasting cheese, or preserves. Camembert work equally as well as Brie. Serve with crackers, bread, or fruit.

6 ounces phyllo dough (6 sheets) - thawed (about 6
1/4 cup butter - melted
1 5 inch ( diameter) whole Brie wheel - (13 ounces)

Preheat oven to 375 degrees F.

Lay out phyllo sheets in a stack; starting with the bottom sheet, brush each sheet liberally with butter. Restack sheets. Arrange cheese wheel in center of phyllo sheets; bring phyllo sheets up around cheese wheel, trimming off excess dough with kitchen sheers. Brush bottom, sides and top of cheese with butter, sealing dough edges or tears. You can store unbaked cheese covered in plastic wrap in refrigerator for up to three days.

To bake, arrange cheese in phyllo dough on a lightly greased baking sheet; bake in a preheated moderate oven (375 degrees F) for about 25 minutes or until done and golden brown.
